Stromboli


Stromboli has been one of our favorite Pizza Night dishes for some time now. I love it mainly because it so easy to make. Rolled up finger food goodness! What's not to love? It starts with a good pizza dough recipe and you add your personal touches to it from there. Anything goes! Stromboli is similar to Calzones, except the sauce is kept on the side for dunking. My pizza dough recipe makes 2 good sized Stromboli. One will feed 1-2 people, depending on how much pizza you can inhale. Hehe.


Ingredients:

  • 1 pizza dough recipe
  • 2 cups shredded mozzarella cheese
  • toppings of your choice
  • 1-2 cups marinara sauce
  • 2 tablespoons olive oil
  • 1/4 teaspoon garlic powder
Preheat your oven to 425F. Place a pizza stone or a heavy baking sheet inside.
Prepare the pizza dough as instructed in my recipe.
Combine the olive oil and garlic powder in a small bowl and set aside.
Place a piece of plastic wrap on your work surface and spray liberally with non-stick spray. This makes the rolling and shaping so much easier! Place half of the dough onto the plastic wrap and lightly sprinkle the surface of the dough with flour.

Flour your hands and press the dough into a rough rectangle. Using a rolling pin, roll the dough into a 8x15 inch rectangle. Flouring lightly if it sticks to your rolling pin.

Place 1 cup of the cheese on the front 3/4 of the dough, leaving about 2 inches along the back and about an inch on either side uncovered. This will ensure the dough will seal well when you roll it up.
Add your favorite pizza toppings on top of the cheese, remember not to cover the areas on the back and sides of the dough.

Begin by folding 1 inch over on each side. Next fold the front 2 inches or so over on top and begin rolling using the plastic wrap to help it along. Pushing the sides in if they unfold on you.

Finish by rolling the Stromboli over seam side up and press the seam and the sides to seal it together.

Place a rimless baking sheet or pizza peel, covered with a piece of parchment paper, in front of the Stromboli. Pull the Stromboli onto the front edge of the sheet and push the plastic wrap back on the front edge, then roll the Stromboli over so it is seam side down on the baking sheet/pizza peel. 

Prepare the second Stromboli in the same way, placing it on the other side of the baking sheet/pizza peel.

Slide the Stromboli and the parchment paper onto your hot pizza stone or baking sheet. While they are baking, heat your marinara sauce and keep warm.

Bake for about 20 minutes or until golden brown. To remove from the oven, simply pull the parchment paper towards your pizza peel or rimless baking sheet. Being careful not to burn yourself!

Brush the olive oil and garlic mixture onto each Stromboli. Allow them to cool briefly before cutting and serving.
