Mango Mousse and Blackberry Parfaits


I love a good parfait. They are very versatile and can be made with practically any fruit. We love tropical fruit and berries, so that's what I chose for this tasty treat. Using frozen mango chunks made this mousse set up pretty fast. If you're not a fan of mangoes, frozen strawberries could be used instead. This recipe is so delicious and couldn't be simpler.


Ingredients:
  • 2 cups frozen mango chunks
  • 1 tablespoon powdered gelatin
  • 1/4 cup cold water
  • 1/4 - 1/3 cup of sugar  (depending on sweetness preference)
  • 1/2 cup heavy cream (optional, just as tasty without it)
  • 1-1/2 cups vanilla or plain Greek yogurt
  • 1/2 teaspoon vanilla or coconut extract (optional)
  • gluten free granola
  • fresh berries

Place 1/4 cup cold water in a small bowl and sprinkle the gelatin over the top. After a minute or so, place the bowl into your microwave and heat at 15 second intervals stirring each time, just until the gelatin is completely dissolved.
Add the frozen mango chunks and sugar to your blender and pulse to break them up a little. With the mixer running on slow speed, pour in the gelatin mixture and extract then raise the speed to puree the mangoes until very smooth. If using the heavy cream, slowly pour that in at this time and blend well.

Pour the mango mixture into a mixing bowl
 

then stir in 1 cup of the Greek yogurt until well blended.
 

Place the mouse into the fridge for 10-15 minutes or until set. 
Mine only took about 10 minutes, thanks to the frozen fruit.

Place a good sized dollop into your serving dish,
 

Next, place a thin layer of granola on top of the mousse, then a few fresh berries. 
Add another layer of the mango mousse and continue layering until you fill your dish. 

Place a dollop of Greek yogurt on top of each parfait. 
Now sit back and enjoy your masterpiece! These are so good!
