Gluten Free French Toast, made on the Cuisinart 6-in-1 Griddler!



Who doesn't love French toast? I know we do here in our home. My youngest son asked me to make this at least 5 days a week when he was little, I'm not kidding. I would ask what he wanted for breakfast and his response was always, "You know, it starts with an F" how cute is that? I miss those days, he's now a 20 year old man! Time sure flies by! This is a quick and easy gluten free breakfast. All you need is a loaf of your favorite gluten free bread, a couple eggs, a little milk and vanilla, Voila, breakfast in 15 minutes! I've made this many times with Cinnamon Raisin Bread as well, Yummy!
I have a little trick to create raisin bread with regular bread, simply poke the raisins into the bread after you soak it. The bread is so soft they just squish right in there! Ooh, I bet chocolate chips would be good too!

Ingredients:

  • 1 loaf of gluten free sandwich or artisan bread
  • 2 eggs
  • 1 cup of milk, milk substitute or heavy cream (oh yeah!)
  • 1/2 teaspoon vanilla or your favorite extract
  • 1/2 teaspoon cinnamon (optional)
  • fresh whipped cream (optional)
  • maple syrup (necessity) :-)
Preheat your griddle or large frying pan over medium-low heat. 
Slice the desired amount of bread and set aside. In a small shallow pan, large enough to hold a couple pieces at a time, combine the eggs, milk, cinnamon and vanilla. 

Place 2 pieces of bread into the egg mixture and press them down lightly to fully submerge. Gently flip the bread slices over with a spatula and soak for 20-30 seconds.

Butter or oil your griddle lightly at this time, if you do this in the beginning, the butter may scorch before you have the bread ready.

You can flip the plates to grill or griddle and the lid swivels to become a panini press. Awesome! 

Place the soaked bread slices onto your griddle and cook for 3-4 minutes each side, keep checking the underside, you don't want them to get too brown.

Continue soaking and frying the rest of the bread in this way. Enjoy!
